Chicken Misua Soup with Patola

This is Ivan-my toddler's favorite. He likes dishes with soup. He eats this soup dish with much gusto, and asks for a second - even a third serving! No wonder he has a big tummy. Enjoy this simple soup with crackers (sky flakes).
 
Tip: When buying patola or before dropping them to your soup, try to taste it. Some varieties of patola can be very bitter and it can ruin your dish completely. This happened to me once and it ruined my mood as well!:)
 
Chicken Misua Soup with Patola
 
 
 
Ingredients:
 
2 pcs. patola, sliced in 1 1/2 inch pieces (Patola tends to shrink once cooked)
1/4 kg chicken, chopped into bite sized pieces (you can substitute or add shrimps)
8 pieces squid balls, sliced into quarters
1-2 packs of misua noodles
5 cloves of garlic, crushed
1 medium sized onion, chopped
salt and pepper
1/3 cup fish sauce (patis)
1 tsp. brown sugar
Hot water/Chicken stock
 
1. In a pot, saute garlic and onion, until fragrant and slightly browned. Add in chicken pieces, salt and pepper. Brown the chicken pieces, then add in the squid balls. Cook until squid balls are a little bit browned as well.
 
2. Pour in hot water/chicken stock about 5 cups or more.  Season with patis and a little brown sugar. Add in misua noodles and patola. Simmer for 5-10 minutes. Season with a little bit more pepper and patis, adjust according to your taste.

    Is there any ways I can lessen the bitterness?
