Battered Shrimps
Battered shrimps is a sure hit with the kids. Claire and her cousin Alexene, loves munching on these tasty and crispy shrimps. Eaten with rice or by itself, dip it in your favorite sauce- sweet and sour, sweet and chilli or simply on ketchup.

Ingredients:
7 pcs. Large suahe Shrimps
1/3 cup flour
3 tbsp cornstarch
1 pc. egg
2 pinches of salt
1 pinch of paprika
1 pinch of pepper
ice cubes
Cooking oil for frying
1. Clean out shrimps, devein, remove the head and peeling. Leave on the tails. Score in the middle (both horizontally and vertically) with a sharp knife, so the shrimp can flatten and straighten out a little. Sprinkle with a little salt, paprika and pepper to taste. Set Aside.
2. In a deep bowl combine the flour, cornstarch, egg, salt, pepper and ice cubes. Mix well until it becomes a smooth batter.
3. In a frying pot, heat oil until smoking. Dip shrimps in batter then gently place in hot oil. Fry until golden brown.
Tip: Batter should be really cold and oil should be hot. If batter gets warm, place ice cubes in a bigger bowl then place your bowl (with batter) in it, just to keep it cool.
4. Drain excess oil in paper towels. Serve with sweet and chili sauce.
