Spam Musubi

Checking out food posts in Facebook can sometimes make me hungry. Upon seeing the post of Hazel (hubby's cousin) making Spam Musubi, it looked so enticing that I wanted to make one too! So after asking for the recipe and checking out the YouTube video she sent (https://www.youtube.com/watch?v=9eYyAmrqUoA), we tried making it ourselves. We had it for breakfast one Saturday morning and it was delish!

Spam Musubi normally uses unseasoned rice. But personally, I like using sushi rice better (cousin's recipe). And I tweaked the recipe a little by adding scrambled eggs, perfect for breakfast!

6 Slices of Spam
Teriyaki Sauce (store bought)
2 sheets of Nori, cut into three pieces (6 pieces total)
Scrambled egg

Sushi Rice:
3 cups newly cooked rice
4 tbsp. Sushi Vinegar (store-bought)
4 tsp. sugar
2 tsp. salt

1 Make the sushi rice by combining the sushi vinegar, sugar and salt well. Taste and adjust accordingly. Sprinkle over newly cooked rice and lightly mix (do not make sticky). Set aside

2 Heat pan and add about 1 tbsp cooking oil. Cook the spam pieces until slightly brown. Coat the cooked spam with teriyaki sauce. Fry the Spam pieces until the sauce dries up a little. Set Aside.

3 Assemble the Spam Musubi. Mold the rice in a Musubi Maker or by using hands (rectangular shape, about the size of the spam). Place Spam on top of the rice. Gently place scrambled egg on top. Wrap with Nori (shiny side out and rough side in).
