Sarciadong Tilapia
The best way of transforming left over fried fish is to make a new dish out of it. Sarciado has a way of turning unappetizing cold fried fish to a sumptuous dish. Pair it with hot steamed rice for a healthy, hearty, meal.
Sarciado is not limited to Tilapia, you can also use fried Bangus and even Galunggong and Hasa-hasa.
Ingredients:
1 kg Tilapia- about 3 pieces, salted (better if kept in the fridge for 5 hours or overnight before frying)
5 pcs. ripe tomatoes, sliced into small pieces
1 medium onion, chopped
1 head of garlic, minced
1 egg, lightly beaten, add a pinch of salt
1 1/2 cups of hot water
3 tbsp flour or cornstarch
1/3 cup Patis (fishsauce)
1 tsp. brown sugar

1. Coat Tilapia in flour/cornstarch . Fry until golden brown. Set Aside.
2. In a saucepan, heat up cooking oil (you can use the left over oil from frying the fish). Add in garlic, saute until fragrant and has a light brown color. Add the onions, cook until soft and transparent. Add in the tomatoes. Saute until tomatoes are soft and has a pasty/mushy consistency.
3. Add the hot water, patis and a little brown sugar. Bring to a boil then simmer in low heat. Adjust the amount of Patis and water according to taste.
4. Gently place in the fried Tilapia in the sauce and continue to simmer for 3 more minutes.
5. Remove from heat, then pour in lightly beaten egg, cover and allow the remaining heat from the pan to cook the egg.
6. Serve and enjoy while hot.
