Turbo-Roasted Rosemary Chicken aka "Sorry-looking Chicken"


In my family, Christmas dinner usually involves a potluck. My siblings and I had a meeting to discuss about Christmas 2013 food theme: Paella, Roasted Pork Belly, Roasted Rosemary, Baby Potatoes, Red Wine, a selection of cheeses...I'm getting hungry just thinking about it. Anyway, I was assigned the task of cooking the Roasted Rosemary Chicken aka "Sorry-looking Chicken" by Papa (He thought it looked payat and kawawa!Hehehe!) But it was sooo..good! Really tender and tasty and perfect with Paella! 


Ingredients:

1 whole chicken approximately 1 kg
1 piece Calamansi
1 tbsp or more of salt
1 tsp. pepper
1 tsp. paprika
2-3 tbsp of Lea & Perrins Worcestershire Sauce
3 tbsp McCormick Dried Rosemary (If you can find the fresh one, that's the best!)




Squeeze in Calamansi juice on the chicken (discard the seeds), make sure to spread the juice all over the chicken. Hand rub the chicken with salt, pepper, paprika, rosemary, and Worcestershire sauce. Make sure to rub the spices in every nook and cranny of the chicken- the inside as well outside. If you have fresh rosemary, feel free to put about 2 sprigs inside the chicken. Marinate for 5 hours or overnight inside the fridge.

Roast in a turbo broiler at 350 F (175 C) for about 50 minutes to one hour. (I did mine 30 minutes on each side), or until fully cooked (juices should run clear when chicken is pricked in the thickest part with a skewer). Let it rest then carve the chicken and serve.
