Chicken Barbecue
It has been a tradition in our family to spend Sunday lunches together. We usually go to mass in the morning, then we head straight to our parents' house for lunch. We do potlucks, but most of the time, my Mom takes the opportunity to once again feed her children with meals prepared with much TLC.
This Chicken Barbecue recipe is one of our favorites. It is served during Sunday lunches at home with the whole family.
Ingredients:
2 kg Chicken Thighs and Legs
1 cup Mama Sita's BBQ Marinade
1/3 cup Soy Sauce
1/3 cup Brown Sugar
8 pieces calamansi juice
1 tsp. Salt
1 tsp. Pepper
Cooking Procedure:
1. Mix together BBQ Marinade, Soy Sauce, Brown Sugar, Calamansi Juice, Salt and Pepper. Mix in Chicken and coat it well. Marinade it inside the fridge for at least 1 1/2 hour.
3. Place all the chicken pieces in a big pan. Pour in the marinade. Let it boil, then simmer until chicken is half-cooked. (This is the technique used by my mom to ensure that the chicken will be cooked through, once you're done grilling it. This also allows the flavor to seep in through the chicken meat.)
4. Remove the chicken pieces and set aside marinade.
5. Fire up the grill. Grill Chicken until well done.
6. For the Chicken BBQ Sauce. Reduce the marinade until it thickens. Pour over cooked Chicken BBQ and enjoy.
