Ensaladang Labanos
I love my salad. This Filipino vegetable salad is a real treat, especially when eaten as a side dish to fried Tilapia or any fried fish. It gives you a refreshing crunch with every spoonful of steamed rice and fish. This is one quick and easy side dish.
Ingredients:
1 or 2 pcs. labanos, sliced thinly
1 pc. ripe tomato, sliced thinly
6 tbsp. vinegar
1 tsp. white sugar
Pinch of pepper
1/2 tsp. of salt
In a bowl, mix in all the ingredients together and let sit in the fridge for about 5 minutes to blend in the flavors. That's it. :) Enjoy with fried fish and steamed rice.
*To remove the bitter taste of labanos: sprinkle salt over labanos slices and mix it in. Let it sit for about 30 minutes then, squeeze out as much juice as you can. Personally, I kind of like the touch of bitterness from the labanos, so I usually skip this part.
