Puto Maya
When I was a little, my sisters and I usually sing this song to tease our other playmates- "Gaya-gaya, Puto Maya" (this means your a copy cat). I never knew that Puto Maya was a kind of food until I got married and lived with my hubby's family. I thought it was just a part of the taunting song and did not mean anything.
Puto-maya is made out of malagkit rice cooked with lihia. It is served with sweetend macapuno or grated young coconut meat sprinkled with brown sugar. It is a yummy dessert treat and a snack in one, it can even be your breakfast, as it is very filling. Eat it together with coffee, tea or hot chocolate. :)
Ingredients:
2 cups, malagkit rice (glutinous rice)
1 tsp lihia (lye water)
1 1/2 cups water, for cooking the malagkit rice
a pinch or 2 of salt
4 pcs. pandan leaves
Cooking Procedures:
In a cooking pot or rice cooker, wash the malagkit rice and drain water. Add 1 tsp of lihia and coat the malagkit rice well. You will notice the rice grains will turn a light yellow color. Mix in salt. Add 1 1/2 cups of water and the pandan leaves. If you are using a rice cooker, let it cook until rice is al dente. But if you are using a stove top let it boil. When water has receeded, lower down the fire to the lowest it can get. Wait for a few minutes until malagkit rice is tender and aldente. Serve with topped grated coconut and brown sugar.
