Pesang Bangus

Rainy days are here again! I actually love how the rain, refreshes everything. It cools down the earth and it cleans the air. The sound of rain as it hits the roof is enough to lull me to sleep, to relax or to curl up with a good book or a good movie while eating chocolate and potato chips! 

My kids especially love the rain because of cancelled classes! They can spend the whole day playing, sleeping and eating. Today I prepared a healthy dish for them, Pesang Bangus: soup to warm up the soul; veggies and fish to nourish the body. Just perfect for a rainy day!




Ingredients:

1 whole Bangus (Milk fish); cut "sinigang" style; remove the scales
1 medium onion, cut into quarters
1 knob of ginger sliced thinly
1 piece carrot, chopped into 4-5 pieces
1 piece potato, chopped into quarters
2 pieces sweet potato, chopped into quarters
3 pieces, saging na saba; sliced diagonally
2 bunches of pechay leaves
5 cups of water
salt
whole, pepper corn
Patis
Knorr Fish Cubes / Chicken Cubes (Optional)


Season Bangus with salt and rub with a little ginger and set aside. (You can do this the day before, just place it in the ref, I noticed that it really helps the fish to become more tasty.)

In a pot, bring water to a boil, then drop in the vegetables: carrots, potato and sweet potato. Let it cook for about 5 mins. before adding in the Bangus, ginger, onion, whole pepper corn. Season the soup with fish sauce, salt, Knorr Fish/Chicken Cubes. Adjust according to taste. Add in the banana and simmer for 10 minutes or until vegetables are tender and the fish is cooked. 

As the vegetables begin to soften, you can mash 1 or 2 pieces of sweet potato and banana to add a natural sweetness to the broth. Add Pechay leaves into the hot soup, just before serving.
