Macaroni and Cheese with Bacon Bits

Seeing my kids enjoying their time playing with their cousin brought back a lot of good memories of when I was their age playing with my siblings. We were all "Batang 80s/90s" and we enjoyed playing with all the street games there is. Among my favorites are Patintero, Siyato, Agawan Base, and Tumbang Preso. I have a scarred knee because of playing on the streets, but it never bothered me at all. Those were our days. Now it's their time to enjoy the carefree days of childhood. Although times have changed, one thing (I will make sure) will remain the same- good memories. I made Mac and cheese with Bacon Bits for them. Good childhood memories will be better- paired with good comfort food.

Ingredients:

800 grams elbow macaroni
4 packs 200 grams Del Monte Cheese Magic
1 165 grams Eden cheese grated
2 tbsp butter
250 grams Purefoods Bacon Crumble
1 can 370 ml Carnation Evaporated Milk
250 ml Nestle Cream
salt and pepper

1. Cook Elbow Macaroni according to package, set aside. Set aside about 1-2 cups of starch water also.

2. CHEESE SAUCE: In a large saucepan, medium fire, melt butter and add in the Bacon Crumble. Cook until just about the bacon sweats. Lower the fire and add in the Del Monte Cheese Magic, Evaporated Milk, Nestle Cream, salt and pepper. Mix well. If it becomes too thick, add some starch water to thin out the sauce. Cook until heated through.

3. In a large pan, mix in the cooked Macaroni and the Cheese sauce together. (Reserve some sauce for topping or for heating up left over Mac and Cheese.) Sprinkle with grated cheese. :)

(L-R) Julia, Claire and Ivan lovin' their Mac and Cheese!
