Palitaw

Being cooped up at home with my family during the enhanced community quarantine had me thinking nonstop of what food to cook and feed our rumbling tummies. Thankful to our cravings, it makes thinking about what to cook next a little bit easier. 

I was craving for "palitaw" a traditional Filipino snack made of glutinous rice, grated coconut, sugar and sesame seeds.  Luckily, I chanced upon the Facebook live video of my second cousin, Chef Pixie Rodrigo Sevilla. She was demonstrating how to cook palitaw at home using ingredients that you have on hand. She shared a food hack on how we can use desiccated coconut instead of the fresh one.  

I had fun making palitaw with Claire, Ivan and their cousin Maya using her recipe but we used freshly grated coconut. We all enjoyed making it but most of all eating it! 

Sharing my cousin's palitaw recipe here.



Ingredients:

2 cups glutinous rice flour
3/4 cup water
1/2 cup roasted sesame seeds
1/2 cup white sugar
1 cup grated coconut 

  1. In a bowl, combine the glutinous rice flour and water, mix until it forms into a dough. 
  2. Take about 2 tablespoons of the dough and form into a ball. Flatten it out with your fingers.
  3. Boil water in a pot. Gently drop the dough into the boiling water. Once it floats, it's done. Scoop it out.
  4. Roll cooked dough in the grated coconut.
  5. Combine the roasted sesame seeds and white sugar. Sprinkle generously on top of the palitaw.
  6. Enjoy!
