Arroz Ala Cubana

My husband usually does not get the chance to eat breakfast at home. He usually leaves for work at 5:00 am. I've been craving for this hearty dish and since I wanted him to be able to taste it, I decided to cook this for dinner instead. This is a very filling dish as it is eaten with rice, sunny side up egg and bananas. Breakfast for Dinner. Enjoy!



Ingredients:

1/2 kg ground beef
1 head of a garlic, minced
1 medium white onion, diced
2 pieces medium carrots, diced
2 pieces medium potatoes, diced
1 small red bell pepper, diced
1/4 cup raisins
2-3 tbsp.tomato paste
1/2 cup water
1/3 cup soy sauce
1/3 cup patis (fish sauce)
salt
pinch ground pepper
1/2 tsp. paprika
cooking oil
eggs, cooked sunny side up
Saba banana, cut in half, then fried

In a pan, heat 2 tbsp cooking oil then cook beef until brown and the juice has evaporated. Set aside. Add more oil if desired, saute garlic and onion. Add in the cooked beef. Then add the carrots and potato. Add the salt, pepper, parika, patis, soy sauce and tomato paste. Add some water. Let it simmer until the vegetables are tender. Add in the bell pepper and raisins and simmer for another 2 minutes. Adjust seasoning according to taste.

Serve with white rice, sunny side up egg and fried Saba banana.
